|Asian-Style Steamed Salmon|
|Serving size: 3 oz salmon, 1/4 cup broth

1 cup - BROTH, CHICKEN, LOW SALT
4 oz - MUSHROOM, SHIITAKE, RAW
2 tbsp - GINGER ROOT, RAW
1/4 cup - ONION, YOUNG GREEN, TOPS ONLY, CHOPPED
1 tbsp - SOY SAUCE, LOW SALT
1 tbsp - SESAME OIL
12 oz - SALMON, SOCKEYE , RAW
Slice mushrooms, mince ginger, chop green onions and cut salmon fillets into 4 portions (3 oz each). You can substitute dried shiitake mushrooms if you like.
Combine broth, mushrooms, ginger, green onions, soy sauce and sesame oil in a large, shallow pan. Bring to a boil over high heat, then lower heat to simmer for 2-3 minutes.
Add salmon fillets and cover with a tight fitting lid. Cook over low heat for 4-5 minutes or to an internal temperature of 145 degrees F.
Serve each piece of salmon with 1/4 cup of broth.
